DESCRIPTION: unmistakable for its strong and persistent bitter taste, with an herbaceous and licorice aftertaste. It appears dark amber in liquid form, with a tendency towards beige- gray after crystallization, which is generally rapid and fine-grained. The aroma is intense and penetrating, with hints of coffee, leather, dry leaves, and balsamic notes. The late autumn flowering and particularly adverse climatic conditions for the bees' work during this season result in limited production and, in some years, even none. The rarity of this honey and its flavor, uncommon to other honeys, make it highly prized and sought after by connoisseurs with the finest palates.
